We thought we’d share one with you that we were given by Signature Chef Julie Frans from The Palms Hotel & Spa’s Essensia Restaurant.
Tofo Curry Recipe
This recipe serves four hungry souls.
Red Curry Sauce Ingredients:
- 2-3 heaping T red or green curry paste
- 3 cans coconut milk
- 2 stalk lemongrass, cut into pieces
- Piece of fresh ginger
- 2 T brown sugar
- 2 T lime juice
Bring the curry paste, coconut milk, lemongrass and ginger to a boil. Reduce the liquid by half. Once the sauce is thickening add brown sugar and lime juice to taste. Strain out lemongrass and ginger. Set aside.
- 2 T coconut oil or other cooking oil
- 1 c sliced onion
- 1 c large diced organic bell pepper (any color)
- 1 c cubed local heirloom eggplant
- handful of broccolini
- 1.5 c cubed organic tofu
- Fresh leaves of purple and green basil
Prepare quinoa according to packaging instructions. While the quinoa is cooking prepare the veggies and tofu. Sauté in coconut oil: onions, bell peppers, eggplant and broccolini. Halfway through sautéing, cover with curry sauce and continue to cook. Once the veggies are cooked to desired consistency (Chef Julie likes them a little crunchy) add in cubed organic tofu, fresh leaves of purple and green basil and cook a few more minutes.
Place warm quinoa in a soup bowl and cover with tofu/veggies mix and curry sauce. Garnish with micro mustard and an orchid.
