Disney Vacation Guide to the best restaurant for authentic Italian pizza

The lively atmosphere at Via Napoli, makes dining out Italian-style at Epcot even more fun. Among the Italian restaurants recently opened in Epcot, this is the first authentic Italian pizzeria and in true Disney style, it’s true Italian right down to it’s name: Via Napoli Ristorante e Pizzeria. In the 300-seat restaurant, the open kitchen and wood-burning pizza ovens are the focal point, but you can get more than pizza. Everything on the menu is authentic, from the signature lasagna verde, creamy béchamel sauce blended with nutmeg, Parmesan cheese and spinach to a platter of fritto misto with calamari, artichoke hearts, fried mozzarella and arancini.

The pizza

Of course, the classical Neapolitan pizzas are what the restaurant is most known for. The traditional margherita pizza is on the menu but Executive Chef Charlie Restivo has a variety to choose from: pizza ortolano, quattro stagioni, bianca and piccante. The pizzas are certified Vera Pizza Napolitana, which means specific ingredients and a traditional pizza-making process including dough that is hand stretched. The pizza is so revered in this restaurant that they’re served from a stainless steel cart that is wheeled directly to the table.

The ingredients

The authentic certification for the pizzas is based on authentic and fresh Italian ingredients, from Parma Cotto to the calibration of the water used. Only San Marzano tomatoes are used and the imported caputo flour comes directly from southern Italy. The handmade mozzarella is also flown in from Italy, and the water comes from a local spring that is calibrated similarly to the pH found in Naples.

The ovens

Oak wood heats the wood-burning ovens up to 700 F. Each oven has a name  – Mount Etna, Mount Vesuvius and Stromboli –  the monikers referring to Italy’s three active volcanoes.  Each oven has a “face” reflecting the volcano’s mythology, and in true Disney style, the oven is within the mouth.
