Disney Vacation Guide: Disney Fantasy Cheesecake Recipe

If you have the pleasure of dining at the Animator’s Palate, you must try the creamy, savory cheesecake. And if you do taste it, you’re going to crave it forever.

Shrimp and Caramelized Onion Cheesecake Recipe

First step is to head to the closest Asian-food store (or well-stocked grocery store) and pick up some Asian barbecue sauce, hot bean sauce and hoisin sauce. While you’re there, get some panko (Japanese bread crumbs). If you don’t have any dry sherry on hand, pick up some of that while you’re out too.

Start with your Asian barbecue sauce.

What you’ll need:

  • 1 teaspoon vegetable oil
  • 1 tablespoon minced shallot
  • 1 tablespoon minced garlic
  • 2 1/2 teaspoons Asian barbecue sauce
  • 1 teaspoon hot bean sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon dry sherry
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/3 cup chicken stock

How to make it:

Combine vegetable oil, shallots and garlic in a saucepan over medium heat and sauté until fragrant. It should take about 1 minute.

Add Asian barbecue sauce, hot bean sauce and hoisin sauce and proceed to cook for 3 minutes or so. Then add your sherry and cook for 1 minute, before adding your soy sauce, sugar and stock which you’ll cook for 5 minutes.

Transfer the whole mixture to a blender and process it until it’s all nice and liquefied. Forget about it while you make the rest of the dish.

Cheesecake crust

What you’ll need:

  • 1 1/2 cups panko
  • 6 ounces freshly grated Parmesan cheese
  • 6 tablespoons unsalted butter, melted

How to make it:

Preheat your oven to 350°F and grease a 9-inch spring form pan.

Combine all ingredients in medium bowl and stir until everything is blended well. Press the mixture into your pan and bake for 15 minutes or until golden brown. Let it cool completely before adding your filling.

Delectable Shrimp Filling

What you’ll need:

  • 1 tablespoon olive oil
  • 1 onion
  • 1 1/4 pounds raw shrimp, cleaned
  • 2 teaspoons sesame seeds
  • 28 ounces cream cheese, at room temperature
  • 1 teaspoon coarse salt
  • 1 teaspoon freshly ground black pepper
  • 3/4 cup liquid eggs
  • 1 1/4 cups heavy cream
  • 1/2 cup shredded smoked Gouda
  • 1/4 cup chopped fresh parsley
  • Micro greens, for garnish

How to make it:

Heat a tablespoon of oil over medium-high heat in a large skillet over medium-high heat. Sauté the onion until caramelized.

Add the shrimp, and sauté until just opaque, then stir in the sesame seeds and set the pan aside to cool.

In a large bowl, combine cream cheese, salt and pepper then beat with an electric mixer until fluffy. Beat in the eggs 1 at a time; add cream, beating until well combined. Stir in smoked Gouda and chopped parsley.

Put it all together

When your crust has cooled, spoon the filling into crust. Place cheesecake on a baking sheet and bake until the cake puffs and the top browns, but the center wobbles just slightly when pan is shaken. This will take about 1 1/2 hours.

Transfer pan to rack and cool. When it’s come to room temperature, run a long, thin knife around the sides of the pan to loosen the cheesecake before carefully removing the ring. Slice it into 14 pieces. Serve with your Asian barbecue sauce and micro greens.
